You’ve identified the turkey recipe you’re going to follow and what you’ll be making for dessert. But what about the sides? If you’re still thinking about which vegetables will deserve a place on your table this year, we have some ideas. Check out these Globe recipes from the past few years.

Mashed potatoes to prepare

Globe contributor Sally Pasley Vargas understands “the acrobatics of the oven and stovetop on Thanksgiving Day” and offers a solution: make-ahead mashed potatoes. “A combination of Russet potatoes (dry and starchy) and Yukon Golds or Yellow Finns (creamy) produces an ultra-creamy and chewy mashed potato. . . . Make-ahead potatoes take the last-minute juggling out of the meal. First, add the butter to the hot potatoes to melt it, so that it coats the potato starches and prevents the potatoes from getting gooey. Whip the cream to lighten the potatoes and remove large lumps. If you want incredibly smooth potatoes, pass them through a potato masher. Once the potatoes are cooked, refrigerate them for up to three days and reheat them in a saucepan, little by little, incorporating them into the hot milk or cream. You’ll have enough here for a few seconds on the big day, or leftovers, which we can all agree is the ultimate payoff for all your hard work.

Jill Gibson gives Thanksgiving stuffing a modern twist with almonds, apricots and dates. “Use firm white sandwich bread, remove crusts and cut into 1-inch cubes,” she writes. “Quick toast them with almonds in the oven, then toss them with the classic couple of onion and celery baked in butter. Add generous amounts of cilantro, rosemary and parsley to amp up the flavors and complement the dried fruits and nuts. Wrap the stuffing in a large baking dish, cover it with aluminum foil so that it cooks without losing moisture, then remove the aluminum foil to crisp the top. Stuffing is a forgiving recipe, so go ahead and make it wetter or drier with the amount of chicken broth you add, or substitute vegetable broth for veggies at the table.

Maple Syrup Glazed Brussels Sprouts

Claudia Catalano says that “for well-charred Brussels sprouts that still have some bite, sear them in batches in a hot skillet, then finish them in a winning combination of Asian fish sauce, maple syrup and lime juice. Add a knob of butter and the sweet, sour and salty liquids will coat the vegetables in a delicious glaze. For a little crunch, top them with a shower of chopped roasted peanuts.

Sweet potato tikka masala

Globe recipe contributor Sena Desai Gopal offers this one for sweet potato tikka masala. She writes that it is “a twist on the popular paneer tikka masala, or the chicken-based version, both of which originated in the Indian subcontinent. In the traditional dish, paneer, fresh Indian cheese, or pieces of chicken, are marinated in spices and grilled or roasted in the oven until lightly crispy on the outside and soft on the inside. . For Thanksgiving, use sweet potatoes cut into short or long wedges for a subtly spicy edge that goes with everything on the holiday table.

Another from Sally Pasley Vargas, in which browned butter, walnuts and lemon “take green beans from ordinary to splendid,” she writes. “To brown butter, melt it in a light-colored pan so you can keep track of the color. After a few minutes, the water in the butter will evaporate as the solids begin to cook. Remove the pan from the heat as soon as the solids lightly brown and smell nutty to prevent them from burning.
