A mother’s love inspires her new venture


MANCHESTER, Md. — With a quick but steady hand, Allyson Hadel makes intricate swirls of frosting down the side of a cake. She decorates like a pro, even though she only recently got into baking.

“I hardly cooked until Abigail was diagnosed with food allergies,” she said.

Abigail is Hadel’s six-year-old daughter, a bright and brave girl with severe food allergies, including peanuts, tree nuts, cow’s milk and sesame. She was also allergic to eggs, but Hadel said Abigail got over it.

“It’s a lot to read labels at the grocery store or online before you buy something and go out and be able to talk to someone to make sure the food is safe.”

This also means that Abigail usually cannot eat the food or desserts when she goes to a party.

“She’s handling it like a champ, but there are times when I can tell she’s disappointed and wants to do what the other kids are doing,” Hadel said.

This inspired Hadel to learn how to bake and use ingredients to make what their family calls “Abby-safe” cakes and cupcakes. Word quickly spread about his ability to make desserts suitable for people with food allergies and other requests began to appear.

“I can’t have eggs, what can you do? Or I’m on a Whole 30 diet, what can I have? And I was able to come up with different recipes and use different ingredients,” Hadel said.

She will use powdered monk fruit in icing to replace the sugar. Extracts, such as almond and hazelnut, impart a nutty flavor to desserts without using actual nuts. She says there’s a lot of trial and error, but she’s always up for the challenge.

“It’s a lot of listening, interacting and figuring out what they can and can’t have, but it’s not impossible.”

Hadel started a bakery business, Treats by Allyson, as she runs out of her kitchen. The biggest reward for her is when customers react to their special cake or cupcakes like Abigail did the first time she was served the same cake at a party.

“She looked at me and she said ‘Mom, I’m eating the same cake as everyone else!’ And as a mom, there’s no better time than to see your child completely excited, happy and normal.”

“My heart is with the children and I make sure the children can be happy and feel the same feelings as ours when she can have a birthday cake.”
