AUSTIN, TEXAS – After Snehee Chaplot received her Master of Science in Food Science from the University of Minnesota in 2009, she held food safety and operational positions at Tyson Foods, The Kraft Heinz Co. and Nestlé before until a debilitating digestive illness prevented him from holding a full-time job. With a passion for food and the mind of a scientist, she decided to “use food to heal me,” she said. In 2015, she founded The Food Shop, Houston, and in August 2019, she launched her first product line, Gallivant Mawa Ice Cream.
Mawa ice cream is made with milk and mawa, which are milk solids from Southeast Asia. Traditional mawa is made by slowly cooking whole milk over many hours, reducing it to one-fifth of its volume by removing moisture. The solids have rich, caramelized notes that, when used in making ice cream, result in a frozen dessert “creamier than ice cream,” Ms. Chaplot said.
“My first years with big brands made me want to create products,” she said. “So I set about developing a more efficient technology to produce mawa without losing any good milk. “
This technology delivers 95% efficiency in one-sixth of the time. Mawa is the key ingredient in its ice cream base.
Ms. Chaplot worked with local farmers to ensure the quality of the milk. As a vegetarian practicing Ayurvedic medicine, Ms. Chaplot recognized the importance of keeping dairy products in her diet, even though Western doctors told her to avoid them. His research suggests that not all milk is created equal and that the way cows are treated and raised influences the composition of the milk, some compositions, such as the A2 protein content, making them more tolerable than others by the humans sensitive to dairy products. By starting with quality milk and concentrating it in mawa, the consumer gets more good things.
Gallivant means “to travel, wander, or move around for fun,” according to Merriam-Webster.
“Many of us have memories of an authentic local ice cream either while visiting loved ones or on our own travel adventures around the world,” Ms. Chaplot said. “When we get back home, we miss that flavor that completely blew us away. I started to think, after traveling to almost 60 countries and discovering the various culinary flavors and authentic cuisines from around the world, why not recreate those flavors.
Gallivant Mawa ice cream is currently available in 10 flavors, including African chocolate, Chinese black sesame, Guatemalan cardamom, Indian mango, Japanese matcha, Madagascar vanilla, Persian pistachio, Spanish saffron, coconut from Thailand and Vietnamese coffee.
“Our suppliers source these ingredients directly from where their roots lie, giving us 100% assurance of their authenticity and freshness,” said Ms. Chaplot. “And we are currently using a co-packer located in the Houston area. “
In August 2019, the company began selling its frozen desserts at farmers’ markets and other events in Texas, and in January 2020 entered the retail space. Like many startups, the pandemic has turned the business model upside down, but a rapid pivot has allowed direct delivery to consumers nationwide through the website. In Houston, delivery is free. Ms Chaplot said several distribution deals are being negotiated and a recent exhibit at the Museum of Ice Cream in Austin, Texas helped spread the brand on social media.
