Fish Tacos Recipe with Red, White and Blueberry Salsa

Tart blueberries add a tangy twist to a classic pico de gallo style salsa. Accompanied by crispy white onions and tomatoes, they make the perfect patriotic topping for simple pan-fried fish tacos. This makes enough salsa for fish tacos, but if you prefer, you can double or triple the salsa recipe and serve with fries as a snack. To keep the red, white, and blue theme going, I recommend looking for red jalapeños or serrano peppers (they’re the same variety, just a bit riper). If they’re not available, feel free to use green peppers or stick with red pepper flakes to stay in theme!

Sweet and crunchy freeze-dried berries add a splash of patriotic color to these gooey marshmallow and cereal bars. I love blueberries and raspberries, but feel free to pick your favorites.
