AZ Big Media These 7 Summer Pie Recipes Are Made For Arizona

It’s still summer in Arizona and it’s still very hot. And, although the pie may not be the first dessert most people associate the scorching weather, there are variations of this treat that can be incredibly refreshing. In my effort to find the most summery pie recipes, I reached out to chefs, bakers, and dessert lovers across the country. From easy lime and strawberry pie recipes to brilliant no-bake beauties, these seven summery pies are sensational to share — or keep to yourself after a sweltering day at work.

No-Bake No-Sugar Lime Pie

There’s something like the combination of sweet and tart that says summer, especially when it comes to a lime. Not only is this no-bake lime recipe easy to make, it requires a sugar substitute. Purecane™ for its crust and filling (so you can eat 10x more in one serving, right?).

“This no-bake no-sugar key lime pie will keep you and your kitchen fresh (and full stomachs) all summer long!” — Kerstin Durden, Associate Director of Brand Marketing for Purecane

Cold Brew Coffee Pie

Alex Mastin, Founder and CEO of Land of the house fell on a cold brew coffee pie recipe he couldn’t resist. By mixing together a can of vanilla pudding, any flavor of cold brew coffee and milk and pouring the concoction into a pie crust, this chilled delight promises to brighten up any warm and sleepy.

“In this type of weather, the last thing you want to drink is a hot cup of coffee. But what if you still want that caffeine fix? This recipe will help you enjoy your favorite beverage while fighting heat — Alex Mastin, Founder and CEO of Home Grounds

The brainchild of Brooklyn Farm Girl Pamela Reed, this strawberry pie really is as easy to make – just add strawberries, crust, sugar, cornstarch and water – and wa-la, you’ve got a slice of summer’s sweet berry goodness!

“Do you feel the heat in Arizona? Cool down with this recipe that calls for a quart of strawberries and other kitchen staples. The only thing you need to bake is the pie crust, then cool the pie. It’s so easy!” —Pamela Reed, Founder of Brooklyn Farm Girl

Nothing says summer like a fresh strawberry pie.

Homemade nectarine and blackberry tart

Why include just one favorite seasonal fruit when you could combine two? That’s exactly what Amy Sandidge of A Red Spatula decided to do when creating her Nectarine Blackberry Pie recipe. This lattice-topped pie blends two distinct flavors to make a perfectly filling summer dessert.

“Arizonans: Top this pie with ice cream for a refreshing treat on a hot summer day.” — Amy Sandidge, Founder of A Red Spatula

Lemon meringue pie

Lemon lovers will find a light and tangy lemon meringue pie recipe in the “The daily fresh egg cookbook.” As Steele explains, “Part of the beauty of this recipe is that you use both parts of the egg: the yolks are used in the filling, while the whites are used in the meringue filling.”

“The sweet citrus in this pie is the perfect cool dessert for a hot Arizona evening.” — Lisa Steele, author of The Fresh Eggs daily cookbook

Best Banoffee Ice Cream Pie

Originating across the pond, Banoffee pie is an English dessert that features dulce de leche, bananas, and whipped cream. Chilled to perfection, Taleen Benson’s version of Banoffee Pie is a crowd pleaser and a teaser for any summer situation.
