Celebrity Chef Matthew Kenney Launches New Plant-Based Menu at Folia


Pioneer of vegetable cuisine, chef Matthew Kenney has unearthed a new menu of nuggets at Folia, at the Four Seasons Resort Dubai at Jumeirah Beach. The new recipes expand on the existing delights of the garden-style restaurant, which Four Seasons Resort Dubai and Matthew Kenney launched in 2019 to great acclaim.

“Eating healthy doesn’t have to mean compromising on pleasure,” says Vincent Chasseignaux, Director of Catering at Four Seasons Resort Dubai. “Matthew Kenney is one of the most talented chefs in the world at creating green, healthy cuisine that everyone can enjoy. We are thrilled to showcase his creations at Folia, where innovative plant-based dishes meet world-class hospitality.

Our new menu, featuring some of my most dynamic dishes, is an exciting chapter in our journey to shape the future of food.

The cold and crunchy section of the menu is particularly refreshing; with the Watermelon Poke delivering a whiff of summer in every bite. The colorful dish features a ponzu-lime marinade and mint garnish that complements a base of kale, macadamia and pickled ginger.

A lunch or dinner in the garden is a social occasion, and Folia’s shareable dishes are a must on every visit. Hot Chicx Mushroom Sliders simply melt in your mouth, transporting taste buds into an umami state, while Buffalo Cauliflower packs a punch of tang and spice.

Pizza is perhaps the most popular comfort food of all, and true to Matthew Kenney’s philosophy of making plant-based cooking accessible, Folia’s pizzas and flatbreads ensure everyone gets a slice of the pie. The Heirloom Tomato Pizza with Almond Ricotta and Olives is a great choice for admirers of the Mediterranean Fair. For those of us guilty of wanting a wink at every dish before it’s devoured, the Tie Dye Pizza with Rosa Sauce, Pomodoro and Basil Pesto won’t disappoint.

The main events are equally impressive, with a remarkable herb gnocchi served with market vegetables and tomato butter stealing the show. Smoked King Oyster Buns are an unexceptional dish, while Folia’s Club Sandwich is a refreshing take on the beloved staple.

The only thing that detracts from Folia’s desserts is that they signal the end of a delicious meal. It is recommended that guests share the proposed trio, because each creation has an essential charm.

The Chocolate Orange Tart conceals a creamy orange cream, which perfectly balances the richness of the chocolate. The second choice sees the best of Italy combined with the tropical treasures of Tahiti, in the Tahitian Vanilla Panna Cotta. And finally, for serial sweet tooths, the Banana Coconut Cream Tart is there to satisfy all cravings while maintaining an almost inconceivable lightness.
