I don’t like to give the menu of our dinners around the world.
Our guest chef Costa Simatos cooked up extraordinary cuisine for our dinner on October 13, and the element of surprise was part of the zing of the evening in the banquet hall of the University Club of WA in Nedlands.
But the menu is so atypical and reflects the “places we’ll go”, that I feel compelled to give some hints.
For one of our courses, we take the oceans, and Chef Costa offers produce from Tasmania to South Australia and Shark Bay.
For another dish, we will “visit” India, and Chef Costa will bring out the sweet flavors in a “Chole” Chickpea Curry with kachumber.
Chef Costa has southern African routes, so the main course, from Zambia and Botswana, is right up his dusty street. You may never get a chance to try white corn dumplings and braised cassava leaves again, even if you go there.
That’s it — I don’t give anything anymore, especially for our Italian desserts or more flavors from France, the United States and Australia.
You just have to come.
