Flour Girl & Flame, a new wood-fired pizza business, is now open for take out in West Allis

A white pizza garnished with forage mushrooms comes out of the mobile wood-fired oven of Flour Girl & Flame. The business now has a physical location at 8121 W. National Ave., West Allis, and is open for take out orders.

A wood-fired pizza company that has grown in popularity with its food trailer offerings now has a physical location in West Allis – and is open for business.

Flour & Flame Girl, 8121 W. National Ave., didn’t open until Wednesday as part of a smooth opening, said Flour Girl owner Dana Spandet.

“I had planned it to be all week,” Spandet said. “But it went well, we’re ready, we’re excited, and personally I couldn’t contain myself. So we just kept going and announced for this weekend.”

Flour girl shared the news via social media on Thursday.

The business will be open from 4 p.m. to 8 p.m. Wednesday to Sunday, closed Monday and Tuesday. For now, it’s only take out. The delivery will eventually be added.

Later, Spandet said they would explore dining options as well.

The menu includes local salads and desserts

Besides the wood-fired pizzas, customers can choose between two salad options; there are also crispy rice treats from West Allis Carrie’s Crisp and homemade wood-fired cannoli dessert calzones that contain mascarpone, chocolate chips, chocolate drizzle and pistachio.

Drink options include Clear water, a black-owned business, Soul Beer Kombucha, which belongs to blacks and women and offerings of Mermaid shrub, another woman-owned business.

“From the start, our goal has been to offer local ingredients and products from a variety of suppliers, so we can stay true to that,” Spandet said.

The ingredients for the pizza are locally grown

Spandet said their pizzas use an organic flour-based dough that is homemade daily with a fermentation time of 48 hours.

Forage mushrooms come once a week; peppers are grown right now in hoop houses in Bay View.

“Just the fact that we get some locally grown peppers in December, I mean, we really do our best to stay true to the local culture and the season,” she said.

Spandet said she hired an executive chef, Morgan Lopez, and was thrilled the company was moving from a mobile operation to a physical one.

“We just have a really amazing team of enthusiastic and enthusiastic people so it’s a really good way to keep the momentum going with the existing team that we have,” said Spandet. “I think people have been pretty excited about our pizza so far so we’re more than happy to be able to deliver this five days a week consistently.”
