1. Italian sausage on a plate with peppers, onions, tomatoes and polenta

Juicy grape tomatoes, sweet red peppers and onion take longer to cook than plant-based sausages, so they have a leg up in the oven. We also cut a pre-cooked polenta log in half and place it on the griddle opposite the vegetables for an attractive browning. Garlic and fresh rosemary in the vegetables echo the flavors of the Italian sausages that are the cornerstone of the meal. We arrange the sausages in this Italian Sausage Sheet with Peppers, Onions, Tomatoes and Polenta by America’s Test Kitchen over the softened vegetables, then fire up the grill – a few minutes of high heat brown the sausages and caramelize the softened vegetables. .

Moist and sweet, this peach upside-down cake from Fabio Gallo is delicious. Delicious caramelized peaches on a vegan sponge cake with fresh lemon. An upside-down cake can be a little tricky, you want to make sure the fruit is cooked, the sugar caramelized and the sponge cake cooked. Before turning the cake, it should rest for about 10 minutes, so that the caramel can set but remains soft enough so that the fruit does not stick to the bottom.

Most of us don’t have the luxury of regularly strolling through Tuscany’s food markets in late September, but that doesn’t mean we can’t enjoy Italy’s autumnal flavors at home. This Farro Bowl with Butternut Squash, Sausage and Radicchio by America’s Test Kitchen features the bounty of an Italian harvest with crisp, bitter radicchio and sweet roasted butternut squash on a base of pleasantly chewy farro (an ancient beloved Mediterranean grain in Italy) . Gorgeous ripe figs lend the bowl a honeyed sweetness balanced by the zesty balsamic Dijon vinaigrette. In keeping with the theme, we combine our homemade Italian sausage seasoning with plant-based meat and top each bowl with the resulting cured sausage crumbs. Any type of fresh fig will work in this recipe. You can substitute 1½ cups seedless grapes, quartered, for the figs, if desired.
