Holiday Drink Ideas with Chef Patrick on Coast Live


HAMPTON ROADS, Virginia. – Chef Patrick Evans Hylton shares great party food and drink ideas that your guests are sure to love!


From a meteorological standpoint, it’s winter and our appetites are turning to bigger and richer foods and drinks. We love stouts, and our friends at Big Ugly Brewing in Chesapeake have three of them this season. Look for Maple-Rum Dark Journey, Ape Hanger, and Ghost Rider. Stouts are dark, strong beers brewed with roasted barley or malt.

A great drink to enjoy this season is our Midnight Stout-ini. Midnight doesn’t just refer to the dark hue of the brew, but also to the short winter days that stack with the winter solstice in the middle of the month.

Our drink combines vodka, coffee liqueur, cola and stout in one tasty sip. We serve it in a martini glass topped with a trio of coffee beans floating on top.

Here’s how we do it:

In a shaker filled with ice cubes, add 2 ounces of vodka and 2 ounces of coffee liqueur such as Kahlua; we say support the local; Chesapeake Bay Distillery in Virginia Beach Curéo says. Shake vigorously.

In a martini glass, add 2 ounces of stout or porter beer and straw to the vodka / coffee liqueur mixture. Supplement with cola. Garnish with a trio of coffee beans.

+ We love the flavors of mulled wine, a seasonal treat.

+ By incorporating the flavor profile of mulled wine and combining it with elements of a classic trifle, you will get a dessert that is sure to please.

+ Our recipe starts by heating some wine with the addition of cherries, orange wedges and pineapple rings.

+ We cut a single layer of white or yellow cake into bite-sized cubes, but you can also use angel food or pound cake.

+ In Mason jars, place a layer of cake cubes and sprinkle with a little mulled wine. Add whipped cream or vanilla pudding and a layer of hot fruit. Repeat. Garnish with whipped topping.

Here’s how to do it:

Prepare the mulled wine by adding in a large pot a bottle of red wine, a cup of apple cider, a cup of cranberry juice, the juice of two oranges, the zest of two oranges, two or three whole star anise, two sticks of whole cinnamon, a tablespoon of whole cloves and 1/3 cup of sugar. Add the segments of 3 oranges and 3 cups of pitted cherries. Stir and place over medium-high heat and cook until heated through, 30 to 45 minutes.

The trifles can be made now and enjoyed with the wine, or the wine can be set aside for later use.

To make trifles, add a layer of cake cubes to the bottom of 4 mason jars. Pour a layer of macerated fruit with mulled wine, and a layer of prepared whipped cream or vanilla pudding. Repeat and garnish with dried cranberries or raisins.
