Local Dessert Stores Feel High Demand for Treats During Christmas Season | Business


As she served a line of customers two days before Christmas, Denise Weaver was extremely busy alongside her husband and their employees selling several of Tyler Just Pies’ signature bakery items.

Weaver said there may not be pies on Christmas Eve, when the pie shop sells on a first-come, first-served basis.

The Weavers have owned the business, located at 2970 Old Henderson Highway, for three years.

As the business enters its fourth year, sales have doubled from last holiday season. Denise Weaver noted that Just Pies is a small, understaffed family business.

For dessert and treat stores in the area, the Christmas season is one of the busiest times of the year.

During this holiday season, Jeremiah Cagle, part owner of Lindale Candy Company, the East Texas base company, said his team is fighting to keep the items on the shelves.

He said business was definitely better than last year and boomed the year before.

The confectionery had to stop taking orders two and a half to three weeks ago. Candy canes and peppermint bowls have been discontinued to accommodate the season, Cagle said.

“We have to make tough decisions to best meet demand,” he said.

The Lindale Candy Company, which is celebrating its 75th anniversary, is one of four confectionery establishments across the country that still make peppermint by hand. The boutique offering handmade candies and a variety of chocolates can be found at 113 W. Hubbard St. in Lindale.

Cagle and his wife Kaitlin, a chocolate maker for 16 years, have owned the business for approximately three years.

He said on Wednesday he expects the team to work most of the day Thursday and Friday.

The boutique will be open from 9 a.m. to 5 p.m. on Friday (Christmas Eve).

Her advice to people looking for holiday desserts and treats is “the early bird gets the sugar.”

The team works over 100 hours a week and late into the night to meet the high demand.

“December is the busiest month, and Christmas is the busiest holiday,” he said, noting that the chocolate kitchen stays busy until Valentine’s Day.

A recent 2,000 square foot kitchen expansion allowed employees to work on chocolate and peppermint manufacturing products. The new kitchen includes windows allowing people to view the candy-making process from the outside, Cagle said.

A weekly schedule is posted on the shop website Facebook and Instagram so people know when they can watch. Cagle sometimes saw around 40 to 50 people watching the candy being made.

Over time, Cagle said they continue to find ways to better serve customers and build on the success of each year.

Although they experienced intense growing pains, he said God has been good, the store has a great team and a lot of community support.

“It was fun and a lot of hard work. The candy doesn’t just happen on its own, ”Cagle said.

On Friday, Just Pies will open at noon and keep the doors open until 6 p.m. or earlier if there are no more. The store will be closed the week after Christmas and will reopen on January 4.
