Inspired by memories of winters in Europe and Asia, Chefs Pongcharn ‘Top’ Russell and Michelle Goh of Mia at 30 Attha Kawi 1, Sukhumvit 26, present a seasonal tasting menu that focuses on flavors and puts them sharply showcased with slow cooking, maturing and fermentation techniques that develop a unique depth to each dish.
Highlights include Mia’s delicious “Josephine Oyster” fried in cornmeal breadcrumbs. The “Duxelle pie” is back and uses seven varieties of local mushrooms. Taste the iodized notes of the sea in the ‘Tuile à l’encre de seiche’. For the main course, celebrate the season with juicy “roasted pork belly” served four ways and miso-glazed grilled eggplant. There is also the ‘WX Rangers Valley tenderloin’, a thoroughbred Wagyu from Australia served with mashed horseradish and sweet potato anna apple.
End the evening with Chef Goh’s desserts: the all-time favorite “Mia’s Cereal Bowl with Malted Milk Chocolate and Corn” or a classic “Mont Noir with Chestnuts and Black Sesame” – a traditional European dessert with Asian flavors.
