Recipes to tickle your nostalgia

New Delhi, September 1 (IANSlife): Onam is a festival celebrated by Malayalis all over the world with a variety of tasty dishes, festive decor and fun activities. Onam is an extravagant festival and elaborate feasts play a huge role in celebrations not only in Kerala but across the world! Having said that, some of the citizens who are far from Kerala and still want to celebrate the festivities with some nostalgia, here are some mouth-watering traditional recipes that can be prepared using Voltas Beko Microwave Ovens and Refrigerators. These will take minimal time and bring back the memories you shared with your family during the festival.

Sarkaravaratti — For a quick family snack!

Servings: 4-5 Duration: 20 minutes

Ingredients:

4 raw green bananas

1 cup jaggery

1 cup of water

1 teaspoon ground cumin

10-12 green cardamom

2 tablespoons dry ginger powder

coconut oil

Not:

Peel and cut the bananas into ¼-inch-thick, moon-shaped pieces

Place a single batch of banana pieces on a microwave-safe plate and put it in the oven

On high power, microwave for one minute. The banana will begin to soften and release moisture

Carefully turn each piece over, then season with salt, ground cumin, dry ginger powder

Microwave for 2 more minutes on high power, pausing after the first minute, then restarting. The fries will be crispy and done at this point. Otherwise, wait another 30 seconds or so.

Take it out into a serving bowl and serve immediately.

Paal Payasam – A dessert you can enjoy with your friends and family!

Servings: 3-4 Duration: 1 hour

Ingredients:

3 tablespoons basmati rice

4 tablespoons of sugar

1 liter of milk

4 green cardamom pods

1 tablespoon Ghee (clarified butter)

10-12 cashews and almonds for garnish

Not:

The rice should be rinsed, drained and soaked for at least 20 minutes. Once soaked, put the rice in a food processor to break up the grains.

Pour the milk into a bowl and microwave for 2 minutes.

Remove and mix the broken and soaked rice with the microwaved milk for another 8 minutes, uncovering and stirring every 2 minutes.

Remove the bowl, then stir in the sugar, green cardamom powder, cashews and almonds.

Cool it for 10 minutes and keep it in the fridge for 1 hour.

Take it out and enjoy a traditional dessert with your family!

Avial — Without which your Sadya is incomplete

Servings: 2-3 Duration: 20 minutes

Ingredients:

For the vegetables-

100 g chopped carrots, beans, brinjal, potato, cauliflower, each

50 g chopped bottle gourd and drumstick, each

To paste-

1/2 coconut, grated 4-5 green chillies

To temper-

200g beaten curd

1-2 dried red peppers

1 tsp mustard seeds

5-6 curry leaves

Chilli powder and salt to taste

1 tablespoon oil

Not:

Make a paste with green chillies and coconut.

Wash and roughly chop each vegetable into 1-inch pieces.

Microwave the vegetables in half a cup of water for 10 minutes

Add coconut chilli paste and salt to microwaved vegetables and microwave for 6 minutes

Heat the oil for 30 seconds and add the dry red chillies, curry leaves and mustard seeds and microwave for 2 minutes.

Pour the tempered oil over the vegetables and microwave for another 2-3 minutes.

Leave to rest for 5 minutes and serve with rice or Pooris.
