  • 3/4 cup diced pineapple
  • 2 tablespoons of honey
  • 1 tbsp lime juice
  • coconut flakes (optional)

In a food processor or high-speed blender, combine the coconut cream, sweet potato, pineapple, honey, and lime juice. Transfer the dough into freezer molds.

Place in the freezer for 3-4 hours. Garnish with coconut flakes, if desired.
