There has always been social distancing between tables at Wiltons – this is to allow carts plenty of room to roam the room.
At a time when a restaurant is well on its way to reaching its teenage years, the venerable Wiltons has 280 years of service to Londoners.
Starting life as an oyster stall on the Haymarket in 1742 when George II was on the throne, Wiltons has been in its current location on Jermyn Street since the eighties. Now, it’s the kind of place where you’re as likely to see a star of stage and screen (Game of Thrones’ Gwendolyn Christie was most recently) as you are a member of the royal family.
To celebrate its 280th anniversary, St James’s Restaurant has designed a seven-course anniversary menu which it will serve to guests all summer long. Costing £280 (see what they did there?), the menu features many of the restaurant’s signature dishes as well as fine wine pairings.
We came to try it. If you fancy trying it yourself, here’s what you’ll enjoy:
Crispy oyster with oyster mayonnaise, cucumber and shiso watercress. Served with Wiltons house Chablis. Oysters are the origin of Wiltons and they still form a significant part of its offering today, with masterclasses offered throughout the year at the restaurant’s oyster bar.
Smoked salmon from Secret Smokehouse with crab, avocado and caviar from Aquitaine. Served with a Pouilly Fumé from Comaine A Cailbourdin.
Lobster bisque with lobster cream, Armagnac and tarragon – served with a Saint Romain Blanc Bourgogne.
At this point, you have the choice of opting for what is probably the restaurant’s most ordered dish, their Dover sole, or a meatier option of lamb. In an ideal world, you’ll be dining with people who order each one so you can try them both.
Dover Sole garnished with tiny Isle of Wight tomatoes and served with a Bruno Clair Marsannay Rose.
Lamb from Domaine Rhug with English peas, petit bijou and tarragon – served with a glass of Côte de Beaune from Domaine Jean & Gilles Lafouge.
After that, there’s a quick but delicious palate cleanser of green apple mousse before reaching the intoxicating heights of dessert.
English strawberry soufflé with pistachio ice cream and served with a glass of Nyetimber Demi-Sec.
Finally, it’s hardly a trip to Wiltons if you don’t get a visit from the sticky and spirits cart, so the final course of petit fours comes with a glass of Remy Martin.
