The Saint-Laurent celebrates its fifth anniversary with an anniversary menu

Since its opening in June 2017, Saint Laurent helped West Coasters fall in love with the cuisine and culture of Quebec, and further afield, the classic cuisine of France. It’s been a turbulent half-decade, winning accolades galore – from taking first place in the top five in enRoute magazine’s compilation of Canada’s Best New Restaurants in 2018, to ranking second on Canada’s Top 100 Restaurants list. – and skillfully changed its business model throughout the global pandemic.

There is a lot to celebrate. That’s why the St. Lawrence team is opening the safe and bringing back some of their favorite dishes, along with classic recipes and a few festive twists. Available June 7 to July 3, the special table d’hôte menu, $85 per person plus tax and service, includes starters like bison tartare and vol-au-vent with mushrooms and Mornay sauce; and dishes like Duck Ballotine, Trout with Striped Shrimp and Mussels, and Rabbit with Mustard. And of course, the restaurant’s famous sugar pie is on the fifth anniversary dessert list. (Full menu included below.)

For Chef/Owner and Winner of Vancouver Magazine’s 2019 Chef of the Year Award, Jean-Christophe (JC) Poirier, the last five years represent the realization of his passion project: a marriage between classic French cuisine and the gastronomic identity and culture of Quebecers. It brings a honed focus and dedication to craftsmanship and age-old traditions to its elevated yet accessible enclave where food, drink and ambiance combine for a portable culinary adventure like no other. Guests sit at the chef’s counter (front-row seating for all the action in the kitchen); slip happily into the friendly seats of the bar; and of course, love the traditional dining room service too.

Chief Poirier’s vision is well recognized. In addition to the aforementioned awards, St. Lawrence was named Best New Restaurant at the 2018 Vancouver Magazine Restaurant Awards; was named #2 in the prestigious annual ranking of Canada’s Top 100 Restaurants 2020; and won back-to-back accolades as Vancouver Magazine’s 2018 and 2019 Restaurant of the Year.

In 2021, Saint-Laurent offered “goodbye” to à la carte and take-out services in favor of unique concepts of multi-course monthly menus available with advanced prepaid reservations, themed on various regions of France with an inspired Quebecois touch. Spotlighting local farmers, artisans and producers, seasonal menus bring the best of British Columbia to the fore and give Chef Poirier and his culinary team creative freedom by providing an exciting blank canvas to work with. each month.
